How to soften your bread crust to make it chewy After you have proved your dough and shaped it in your bread tin, you bake it and remove it from the oven. You then remove it from the bread tin while it is still hot and put it on a cooling rack. At this point, you cover your still hot bread with a damp tea cloth. This will rehydrate the crust, keep its colour and make it extra tasty. Remove the cloth once cooled and keep it covered with a dry cloth. You will now have a super delicious loaf of bread with a crust that is easy to cut through and nice and chewy. You have now prevented the crust of the bread to break up into crumbs destroying each slice. Make sure the loaf of bread is still hot from the oven when you cover it with a damp cloth and that it is cooled properly before you slice it.
